A Recipe that is simple, good for you, tastes great and is easy… but will never be on Food Network

She will not be cooking this for you. But don't you wish she would?

Long title?  Whatever.  Powerlifting Recipes of Awesomeness was already taken.  As I type this, I am eating the first in a (hopefully) long line of Spartan-esque meals I plan to pass your way.  So far, I’m loving it.

Look – I know as well as you do that sometimes eating paleo-ish can be tough; especially when you’re leaving the gym and you haven’t shopped and your girlfriend isn’t making you dinner tonight.  You’ve got nothing in the fridge, you’re hungry.  You can’t eat out, because Chipotle is getting a little repetitive… so what do you do? Try this:

Inside-Out Stuffed Peppers

Stop at the store on the way home and grab:

  • 1 pound ground beef (preferably grassfed – even Target sells it)
  • 2 green peppers
  • 1 medium yellow onion
  • 1 can diced tomatos, any flavor you like
  • Bacon (this should be the one thing you DO have in your fridge, but in case you don’t…)

Procedure:
  1. Start two pans
  2. Open meat, throw in hot pan #1
  3. Grab 6 slices of bacon, cut up using scissors and drop right into pan #2
  4. Slice onions, green peppers and open/drain tomatos
  5. When bacon is crispy, take meat off heat,
  6. Drop sliced onion and peppers into bacon pan
  7. Cook onion/pepper/bacon until onions are a little see-through
  8. When onions are done, drop in meat and tomatos, turn heat down to very low.
  9. Let sit for 10-15 minuts on very low heat (this would be a good time to take a shower)
  10. Put it in a bowl and EAT

What should we call it?  Delicious.
